Alur chop, a popular Bengali
snack made with mashed potatoes and spices, coated in breadcrumbs and
deep-fried to a crispy golden brown:
Ingredients:
4 medium-sized potatoes,
boiled and mashed
1 onion, finely chopped
2 green chillies, finely
chopped
1 tsp ginger paste
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
1 tsp red chilli powder
Salt, to taste
2-3 tbsp chopped coriander
leaves
1 egg, beaten
Breadcrumbs, as required
Oil, for deep-frying
Instructions:
In a mixing bowl, combine the
mashed potatoes, onion, green chillies, ginger paste, cumin powder, coriander
powder, garam masala powder, red chilli powder, salt, and coriander leaves. Mix
well until all the ingredients are well combined.
Take a small amount of the
mixture and shape it into a small ball. Flatten the ball slightly to form a
patty. Repeat with the remaining mixture.
Dip each patty in the beaten
egg, then coat it in breadcrumbs.
Heat the oil in a deep-frying
pan over medium-high heat.
Once the oil is hot,
carefully drop the patties into the hot oil and fry until golden brown and
crispy.
Remove the alur chops from
the oil using a slotted spoon and place them on a paper towel to drain any
excess oil.
Serve hot with your favorite
chutney or sauce.
